WINE MAKING
Made following organic viticulture practices. The blends are blended to achieve volume and structure, freshness, acidity, and aromatic potential.
Upon arrival at the winery, the grapes are destemmed and gently crushed, followed by a brief cold skin maceration to extract maximum aromatic potential. A gentle pressing is then carried out, followed by static settling. Fermentation takes place in stainless steel tanks over approximately 21 days at low temperatures to preserve the varietal aromas.
Following the traditional method, tirage is performed, and the wine rests in the cellar for 24 months for aging, at a constantly controlled temperature, until disgorgement. A dosage is then added, followed by sealing and labeling.
AGEING
24 months.
