Joan Sardà Sotavent
100% Xarel·lo

A pale yellow white wine with bright greenish reflections. On the nose, it is intense, with a dominant fruity expression featuring notes of white fruit —apple and pear— and yellow fruit —vineyard peach and apricot. As it opens up, floral notes begin to emerge, which blend on the palate with the wine’s fruity aromas and its varietal character. Elegant and silky, it offers a persistent finish.

WINE MAKING
Once the grapes are taken into the cellar, they are destemmed and crushed. This is followed by a short cold maceration to extract maximum aromatic potential. After that, the grapes are gently pressed and undergo static draining. Fermentation takes place in stainless steel tanks for about 15 days at low temperatures in order to preserve varietal aromas.
AGEING
The wine is then aged on lees for one to two months, depending on the harvest.
PAIRING
A wine that pairs beautifully with blue cheeses, seafood, grilled fish, and fresh pasta.

“The side of the horizon toward which the wind blows.” A name that defines the character of this wine, rooted in the land but looking out to sea, evoking the lightness of its breeze.
